This is a SUPER easy noodle dish. You will need a wok for optimal veggie cooking perfection, but a cast iron skillet will also do. The sweet potato noodles are super yummy. They have a jelly-like feel to them, and are a refreshing change from traditional rice noodles.
Ingredients:
- sweet potato noodles - you can find these at any Asian market (or online).
- bunches of baby bok choy (chopped)
- shredded carrots
- mushrooms (shiitake are best, but any mushroom will do)
- fresh garlic (4/5 cloves diced fine)

- coconut oil
- tamari sauce
- sweet and sour sauce
- fresh lime
- hot chili paste (optional)

Here is how I cook my noodles:
With a pair of good kitchen scissors cut the needles in half before cooking
boil the noodles in a large pot for about 5 minutes. drain and rinse in cold water. Place back in the pot with cold water. Remove from heat and let stand while you prepare the veggies.

Veggies:
Slice and dice everything as directed in the ingredient list. Heat your wok on medium and add coconut oil. Add carrots and mushrooms and cook for a few minutes. Add bok-choy and tamari. Cook for a few minutes until leaves are wilted. Add sweet and sour sauce and cook for a couple of more minutes. Drain the noodles, and add to the wok. Stir everything together and add fresh garlic. when it is well stirred, turn off the heat and add green onions.
When serving on your plate, squeeze fresh lime juice, add some tamari and hot chili pasta if you like a flavorful zing! Best enjoyed with chop sticks! :)
