My son Dante (12) makes the most delicious potato salad! It is super simple, fast and easy ... it must be genetic because his aunt makes the best potato salad in the family!
The quantity of the ingredients is really all personal preference. We love onions and pickles, it's pretty crunchy when Dante makes it!
Ingredients:
- red potatoes (or any kind you like for potato salad - either way, organic is best!)
- dill pickles (chopped small)
- sweet onions (we love the Washington Walla Walla! - also chopped fine)
- vegenaise (or any other mayo-like dressing)
- mustard
- salt and pepper
- dill (fresh or dry - in abundance!)
- nutritional yeast
- fresh garlic or garlic powder
I help Dante with the potato prepping - he washes and we cut and cube them together (keep the skin!). Boil until soft but not too soft the cubes will break! Drain, and rinse under cold water.
While the taters are cooking, prep all the other ingredients!
Mix everything in a big bowl. You can either enjoy it slightly warm/room temp or refrigerated!!
I spice mine up with a little dash of cayenne!!
